Potato & Pea Dumplings 

This dish is not only delicious, it is very healthy and also vegan! So win-win! 

I served them with couscous salad and roasted carrots! 

My boys and my husband loved them! 

Green peas are a very good source of vitamin K, manganese, dietary fiber, vitamin B1, copper, vitamin C, phosphorus and folate. They are also a good source of vitamin B6, niacin, vitamin B2, molybdenum, zinc, protein, magnesium, iron, potassium and choline.

Ingredients:

1kg peeled potato 

300g frozen peas

70g flour of choice (gluten free, white, wholemeal, oats flour, etc)

1 teaspoonturmeric

Zest of 1 lemon

Sea salt & black pepper

Olive oil for frying

 




Method:

1. Roast potatoes with some olive oil sea salt and pepper for 30-40 minutes – until soft-

2. Boil the peas for 5 minutes or until cooked

3. Mash the potatoes, peas, flour, turmeric, lemon zest, sea salt and pepper 

4. Form your delicious dumpings and fry them with a tiny bit of olive oil or bake them in the oven turning every 3-4 minutes
