Vegan Cheese Recipe

A friend of mine from Mexico gave me this recipe last year and I didn’t really want it to do it as I didn’t think it be nice. 

But after seeing a lot of pictures of it looking delicious I decided to give it a go! 

So here are the ingredients: 

350 grams peeled potatoes (3 potatoes)

130 grams of carrots (1 large carrot)

1/3 cup of extra virgin olive oil

1/2 cup nutritional yeast (see picture below)

1 teaspoon sea salt & pepper 

1/2 teaspoon cayenne pepper (optional)

This is the nutritional yeast and I bought it in Holland and Barret: (this ingredient is essential as it is what it gives the cheese taste to it)


Method:

1. Dice and Boil the potatoes and carrot until soft

2. Blend with the rest of the ingredients 

Tip: if mixture is too thick, add 1/4 cup of water to get your blender goin!

I made those crispy bites by cuting 2 wraps and rob them with olive oil and toast them in the oven for 8-10 minutes! So handy and healthier!
