Spinach-soufflé Baguettes

This is a delicious simple recipe that would be a hit having friends over with a glass of vino! 

I love the fact they can be enjoyed cold, so you can make them during the day to have ready for night time and have minimal mess to clean!

Ingredients: (serves 2)

2 baguettes (I bought mine in Dunnes)

200g spinach

1 onion

150ml double cream

2 eggs

1 clove of garlic 

80g cheese of choice (I used cheddar but gruyere cheese would be amazing)

Sea salt and pepper


Method


1. Sauté the onion and spinach with a tiny bit of olive oil

2. In the meantime in a bowl mix the cream, eggs, cheese, sea salt and pepper


3. Slice a lid of the baguette and scrap the insides so you can refill them


4. Mix in the bowl the spinach and mix all the ingredients properly 


5. Refill the baguettes with the mix and bake for 30-35 minutes at 180 degrees Celsius 

6. Wait until the cool down a little and slice and enjoy
