This muffins are ideal to kill the sweet cravings! They are at only 150 calories each so you can perfectly eat 2 of this for a snack or eat one with some almond butter on it and it’s delicious and within Your calories.
Now, I’ve modified this recipe a few times and the fully vegan version is just as nice as the one with eggs. So here it goes:
Ingredients:
1 and 1/2 cup of white flour
3/4 cups of oats
1/2 cup of light brown sugar (you can also use coconut sugar)
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 cup of milk of choice (I used Alpro unsweetened almond milk)
1/4 cup melted coconut oil (butter works just as nice)
2 eggs or 3 flax eggs for the vegan version (to make flax egg combine 1 tablespoon of flaxseed with 2.5 tbsp water and let it rest for 5 min until is thick and gooey). For this pictures I used normal eggs.
2 teaspoons vanilla extract
1 cup of blueberries (if you are using frozen do not thaw)
Method:
1. Preheat oven at 180 degrees Celcius
2. In a bowl, combine flour, oats, baking powder, salt, cinnamon and sugar
3. In a different bowl mix well the milk, oil or butter, eggs and vanilla
4. Make a well in the center of the flour mix and pour the liquid mixture and combine well
5. Fold in the blueberries into the mixture
6. Pour the mixture into a muffin tray lined with silicone moulds. (I find them better than paper cases as the paper usually sticks)
7. Bake for 20-25 minutes
8. Enjoy

Yes I’m sure that would work but add 2 cups as almond ground isn’t as strong as flour x

I know half a cup of oats is 35grams. But different foods weights different. Apologies. I should have weighed i find easier creating recipes with my cup
