Banana-raspberry mini cupcakes

This mini cupcakes didn’t last an evening in my house, between my boys and I, we ate them all in a couple of hours, maybe minutes!

Ready in a few minutes and very tasty with a cup of tea or coffee.

Ingredients:(makes 14 mini ones, 6 medium ones)

1 big banana or 2 small ones

1/2 cup oats

1 egg

1/2 teaspoon baking powder

1 teaspoon of vanilla extract

2 tablespoons of coconut flour

Method:

Pre-heat the oven at 150 degrees Celsius.

Blend all ingredients in the blender.

Pour into the moulds lined up in a cupcake tray.

Stick a raspberry on top of each one

Bake for 12 to 15 minutes
