This tomato sauce recipe is extremely handy to use as a base into any dish!
My mom keeps this sauce in the fridge at all times and she uses it in every soup, casserole or sauce! Even just a few tablespoons add a lot of flavour to dishes.
Now my mom uses a more traditional merhod I use the lazy method. She boils the tomatoes, skin them then proceeds with my recipe. But here is how I do it:
Ingredients:
1 carton of passata (500ml)
1 onion
2 garlic cloves
1 handful of parsley
1 stockcube (veggie stock)
Sea salt & pepper
Method:
Simply add all ingredients into the blender blend well. Then transfer in a saucepan, bring it to the boil then simmer to reduce.
If you want to add a lot of flavour to it add a teaspoon of chipotle pastle. I buy mine in Tesco and it looks like this:
I used this sauce to make a quesadilla wrap for my boys (you’ll find this video on my Instagram) but here is a picture of one of my boys enjoying it:
You can also use it in pastas, to make lasagna, soups or as a base for a sauce!
