Huevos Rancheros is a typical breakfast in Mexico which the sauce is much more spicy than this recipe, but I have to adjust for you all so you don’t end up on fire!
Also, in México, this dish is served on top of 2 deep fried corn tortillas which we are also avoiding that because of health and fitness! (Lol)
Ingredients (serves 1)
1/2 onion
1 garlic clove
1/4 red bell pepper
1 spicy pepper (optional)
1 can of tomatos
2 eggs
Handful of corriander
Smoaked paprika
Sea salt
Pepper
Method:
Sautéed the onion, garlic and pepper (s) until well cooked. Add the can of tomatoes and condiment well!
Make 2 holes on the sauce and crack the eggs in them and the sauce poach the eggs!
Sprinkle the chopped corriander, serve and enjoy!
I also added a few slices of avocado on top!
