Quinoa Cookies (vegan)

This quinoa cookies are packed with nutrients and are a favourite recipe of my kids.

If they could, they would eat them all in the one go and so would I!

They are vegan and very easy to make!

Ingredients:

1 cup of pecans or hazelnuts

1 cup of almond flour (I used the left overs of my almond milk)

1 cup of uncooked quinoa

1/2 cup dates

1/3 cup maple syrup (you can use honey if you’d like)

3 tablespoons cacao powder

1 tablespoons chia (optional)

2 tablespoons coconut oil

Method:

1. Preheat your over at 150-180 degrees Celcius

2. Blend all the ingredients together

3. Form the balls then press down with a fork to make them bigger

4. Bake for 20 minutes

5. Enjoy!
