Quinoa & Black Bean Stew

This pot of food is so delicious and perfect for this weather!

My boys also loved it! And I think it would also be amazing for weaning babies if you blend it and store in small little pots.

Ingredients:

1 can of black beans (I cooked 170g from scratch as couldn’t find any cans)

2 big sweet potato

1 cup of uncooked quinoa

400ml passata

1 red onion (I had to use white as I didn’t have any red)

Mixed bell peppers (1/4 of each colour)

3-4 cups of vegetable stock

1 teaspoon cumin

1 teaspoon paprika

Pinch of turmeric

Pinch of cayene pepper

Sea salt and pepper to taste

Handful of corriander

Method:

1. Sauté the onions and peppers with a little bit of olive oil

2. Add the can of beans, quinoa, passata, sweet potato and stock and bring it to the boil

3. Add the spices and simmer for 30-40 minutes

4. Serve with some chopped avocado on top!

So simple and easy to make
