Quinoa Honey & Mustard Salad with Veggie Clonakilty Pudding |AD|

This salad is one of favourites!!! I love the idea of having meat texture on my salad without actually having meat in it.

This veggie pudding is delicious and the ingredients on it are amazing.

Ingredients are as listed: Ingredients: Gluten Free Oatmeal, Onions (35%), Water, Black Beans (8%), Carrots (6%), Pea Starch, Salt, Natural Spices. (Suitable for Vegetarians, Vegans and Coeliacs)

Which is amazing! Gluten free, vegan and so tasty is not an easy combo to find!

Anyway here is the recipe for the salad! Hope you love it as much as I did. This is for sure going to be a regular.


Handful of spinach

1/2 red onion

1 carrot grated

10 cherry tomatoes halves

1 cup quinoa

1 Clonakilty Veggie Pudding

50grams feta cheese

For the dressing:

2 tablespoons honey

1 1/2teaspoon of English mustard

2 tablespoons extra virgin olive oil

Juice of one lemon

1/2 teaspoon sea salt

Chilli flakes to taste


1. Cook your Clonakilty Veggie Pudding in a frying pan.

2. Mix all your salad ingredients in a bowl doing the dressing on a separate bowl until well combined

3. Mix them all together and enjoy!
