Ingredients:
2 carrots
1 red onion
1 red pepper
1/2 cup of quinoa
2 cans of black beans
500ml passata
500ml stock
1 teaspoon of paprika
Handful of parsley
Method:
1. Chop veggies do desire size
2. Sauté them for about 15 minutes or until is onion is translucent
3. Add the passata and the stock and bring it to the boil
4. Add the paprika, parsley and season to taste
4. Add the black beans and quinoa and bring heat to a simmer. Let it cook on low for 20 minutes or until quinoa is cooked
TIP: rinse quinoa before using to get rid of that “bitter” taste sometimes it has
